How many times have you found yourself craving a loaded homemade pizza, only to give up and order delivery because making the dough feels like too much effort?
Next time, before reaching for your phone, try making "lazy pizza" instead.
How to make lazy pizza
These are essentially personal pizzas made with Greek pita bread, a simple tomato sauce and whatever toppings you like.
In just a few minutes, you can have individual pizzas tailored to everyone's tastes, solving the eternal problem of agreeing on toppings.
It's also an ideal option for a quick children's meal after a busy day. Kids love pizza, and this recipe is a simple answer to the question: How do we make a quick and relatively healthy meal?
Recipe
Ingredients (serves 4)
- 4 pita breads
- 2 tbsp tomato paste
- 1-2 tbsp water
- 1 pinch dried oregano
- 8 slices of deli meat of your choice, cut in half
- 200g grated cheese of your choice
- 1-2 tomatoes, thinly sliced
- 1 green pepper, thinly sliced
- 100g mushrooms, sliced
Method
Preheat the oven to 200°C.
In a bowl, dilute the tomato paste with the water, add the oregano and mix well.
Line a baking tray with parchment paper and place the pita breads on it.
Using a spoon or pastry brush, spread the tomato sauce over each pita. Top with the tomatoes, pepper, mushrooms, deli meat and grated cheese.
Bake for 8-10 minutes, or until the cheese has melted and turned golden.
